Cheesy Sausage Bolognese Loaded Sweet Potato

Our family bolognese gets a delicious twist with Eve Smallgoods Hungarian Beef Debreciner, loaded onto a fluffy baked sweet potato with melted cheese, guacamole, fresh pico de gallo and sour cream. A comforting meal packed with flavour.

Ingredients

• 1kg lean beef mince

• 800g condensed tomato soup

• 1 can diced tomatoes

• 3 tbsp dried oregano

• 2 tbsp dried mixed herbs

• 1 onion, diced

• 2 garlic cloves, minced

Toppings

• 5 sweet potatoes, 1 per person

• Shredded cheese

• Guacamole

• Pico de Gallo

• Sour cream

• Salt and pepper, to taste

Directions

1. Preheat the oven to 200°C.

2. Wash and dry the sweet potatoes, prick each one several times with a fork and rub with a little olive oil and salt. Place on a baking tray and bake for approximately 45 to 60 minutes, or until soft all the way through.

3. Heat a large frying pan over medium heat. Dice the onion and finely chop the garlic. Add the lean beef mince and cook until browned, breaking it up as it cooks.

4. Stir through the diced onion and minced garlic. Cook until the onion has softened and the garlic is fragrant.

5. Build the family bolognese. Add the condensed tomato soup, diced tomatoes, oregano and mixed herbs. Stir well to combine.

6. Slice the Eve Smallgoods Hungarian Beef Debreciner and stir it through the sauce.

7. Reduce the heat and let the bolognese simmer for approximately 20 to 30 minutes, stirring occasionally, until the flavours have developed and the sauce reaches your preferred consistency. Ensure the beef is thoroughly cooked.

8. Once the sweet potatoes are tender, carefully cut each one lengthways and fluff the inside with a fork. Spoon the sausage bolognese generously over each potato.

9. Add the cheese. Sprinkle with shredded cheese and return to the oven for a few minutes until melted.

10. Finish with fresh toppings. Add guacamole, pico de gallo and a dollop of sour cream.

11. Serve and enjoy. Enjoy your cheesy sausage bolognese loaded sweet potato while it’s warm and full of flavour.

Cooking tip: This bolognese makes approximately five serves, so any leftover sauce can be refrigerated promptly and enjoyed with pasta or another baked sweet potato.
