What Makes Our Ham So Good?

Here’s how our ham compares to industry standards:

Low Nitrate Recipe, Passed Down Since 1878

Our latest lab tests (May 2022) show just 20mg/kg of nitrates and nitrites in our ham, well below the Australian maximum of 125mg/kg.

Compare that to vegetables like spinach or cabbage, which can contain 54–2440mg/kg of naturally occurring nitrates!

We never use sulphites, and we never rely on additives for shelf life. Instead, we rely on skill, slow cooking, and precision curing.

Not Just Preserved—Perfected

Many producers use nitrites purely to extend shelf life.
We use the bare minimum, just enough to keep that classic pink colour, and rely on experience and slow methods to lock in flavour and keep your ham fresh, naturally.

Our Black Forest Inspired Ham is made using pork legs that are:

Antibiotic-Free & Hormone-Free

Cured using a family recipe dating back to 1878

Heavily smoked using Beechwood & Juniper chips (with precise moisture control)

Slow-cooked over twice the industry standard cooking time
→ This locks in moisture and delivers that firm, satisfying bite.

This isn’t the fermented, air-dried Black Forest ham you might know.
It’s our own cooked version, deeply smoked and full of bold flavour.
