Chorizo and Chilli Cheese Kransky Enchiladas

Ingredients:

1 pack chorizo

1 pack chilli cheese kransky

1 yellow onion

1 red onion

1 capsicum

2 garlic cloves

1tbs olive oil

500ml tomato passata (give or take)

1tbsp oregano

1tsp cumin

Tortilla/wrap of choice

Cheese to top

Garnish with jalapeños and parsley

Method:

Preheat oven to 180 degrees and place a fry pan over medium heat.

Prepare and cut vegetables. Add olive oil to the pan ad cook onions until soft. Add garlic and cook for 3 minutes. Add tomato passata and oregano and let simmer for 5 minutes. Remove sauce mix and set aside.

Add red onion and capsicum to the pan and cook util soft. Stir inn the cumin and leave to cook for 3 minutes.

Add sausages if desired but are warmed perfectly placing straight in the enchilada inn the oven (most of our products are precooked).

Spread a thin layer of sauce along the base of a medium dish.

Prepare the tortilla/wraps by placing on a board. Spread the passata mix, add the sausage, red onion ad capsicum, roll ad place in dish. Repeat for all enchiladas, spread passata over the enchiladas and top with desired amount of cheese. Place in the oven ad cook until cheese has melted ad has turned golden brown.

Top with jalapeños and parsley then serve!
