Chorizo and fennel one pot pasta dish

Ingredients:

2tbs olive oil

1 pack chorizo sausage

3 garlic cloves

2tbs chilli flakes

2tsp oregano

2 fennel bulbs

1/2 cup white wine

1//2 cup chicken/veg stock

1 400g can of tomatoes

400g pasta of choice

grated parmesan

parsley to serve

Method:

Heat oil over medium heat in large fry pan, adding the chorizo sausage sliced and stir until warmed. Add in chopped/minced garlic, chilli flakes and cut up fennel. Cook for 3-4mins, Increase heat and add wine, stock, tomatoes and oregano. Bring to a boil and let simmer until sauce thickens.

Cook your chosen pasta in a saucepan of boiling water until al dente. Add pasta to the sauce and mix or keep separate.

Serve with grated parmesan and parsley.
