Aussie Sausage Lentil Salad

Ingredients:

1/2 cup lentils

1 pack of Aussie Breakfast Sausages

1tbs olive oil

1 pear

2 spring onions

2 cups rocket

parsley to garnish

Dressing:

1/4 cup apple cider vinegar

1tbs dijon mustard

Method:

Prepare the lentils and cook in boiling water for 15-20mins, drain. and set aside. Slice the sprig onions ad pear into thin wedges.

Dressing: whisk ingredients in a bowl ad set aside.

Heat fry pan over medium heat and add oil, cook sausages until browned.

Combine the lentils with most of the dressing and spread out the rocket, lentils, pear, sausages, sprig onion and top with the remaining dressing. Garnish with parsley and serve.
