Chorizo Quiche

Next time you need an energy boost at lunchtime or a dish for entertaining, whip up a chorizo quiche!

I’d never been much of a quiche fan until a couple of months ago when I decided to try and make one for myself. It took all of 10mins to prepare and 20mins in the oven. What’s more, they freeze really well!

Here’s the secret:

  1. Line a dish with baking paper. Place a sheet of filo or short crust pastry into dish.

  2. Bake until pastry is starting to turn golden in colour.

  3. Remove from oven.

  4. Crack 4-6 eggs in a bowl

  5. Add 3 tablespoons pouring cream, plus salt & pepper to taste.

  6. Mix well.

  7. Slice and dice the following:

  8. Red capsicum cheek, half Spanish onion, mushrooms, chorizo.

  9. Arrange on half-cooked pastry base.

  10. Sprinkle on mixed herbs and Parmesan cheese, then pour egg mix over the top.

  11. Bake at 150 Celsius for approx 20mins.
