Chorizo Quiche
Next time you need an energy boost at lunchtime or a dish for entertaining, whip up a chorizo quiche!
I’d never been much of a quiche fan until a couple of months ago when I decided to try and make one for myself. It took all of 10mins to prepare and 20mins in the oven. What’s more, they freeze really well!
Here’s the secret:
Line a dish with baking paper. Place a sheet of filo or short crust pastry into dish.
Bake until pastry is starting to turn golden in colour.
Remove from oven.
Crack 4-6 eggs in a bowl
Add 3 tablespoons pouring cream, plus salt & pepper to taste.
Mix well.
Slice and dice the following:
Red capsicum cheek, half Spanish onion, mushrooms, chorizo.
Arrange on half-cooked pastry base.
Sprinkle on mixed herbs and Parmesan cheese, then pour egg mix over the top.
Bake at 150 Celsius for approx 20mins.
