Smoked Bratwurst and Pea Pie
Ingredients:
2 potatoes
Olive oil
1/2 onion
2 garlic cloves
Smoked German Bratwurst
Chilli flakes to taste
1tbsp rosemary
150ml chicken/vegetable stock
1 zucchini
Handful spinach
1/2 cup frozen peas
Cheese, rosemary ad chilli to serve
Method:
Peel and slice potatoes into wedges and place in a saucepan of water and a pinch of salt. Place over high heat and bring to a boil. Continue to cook for 15 - 20 minutes util soft.
Heat oil in a fry pan over medium heat. Cook the onion and garlic until soft. Add the sliced up sausage, chilli and rosemary and cook for 3-4 minutes, stirring. Add the Wye and cook until almost evaporated. Add I the vegetables and continue to cook for all liquid from the vegetables has evaporate.
Once potatoes are cooked, mash util smooth. Place the sausage filling into a ramekin pot ad top with mashed potato, roughening the surface with a fork. Top with cheese ad place in oven util cheese has melted and potato is golden and serve!
